Anything Goes Nachos
Anything Goes Nachos Recipe
An easy quick dinner where you just add all ingredients, bake and serve!
INGREDIENTS
About 10 oz of tortilla chips ( 1/2 a bag) preferably seasoned such as Late July’s organic lime chips.
1 can garbanzo beans ( drained and rinsed) *
1/2 cup sliced green olives with pimento *
1/2 red onion chopped *
1cup cherry tomatoes chopped
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp cumin
1 cup of shredded vegan cheese ( Such as Daiya, SO delicious)

2 green onions ( light and dark green parts) sliced thin
1/4 cup minced fresh cilantro
1 avocado pitted and cubed
Fresh salsa
1 lime cut into wedges
Drizzle of lime sauce ( 1/2 cup vegan mayonnaise, 1/4 cup lime juice, 1 tsp honey & 1 tsp smoked paprika)
DIRECTIONS
Pre-heat oven to 375
Line a rimmed baking sheet with parchment paper or foil
Add chips and sprinkle them with garlic powder, smoked paprika, cumin, and salt
Add all of the first listed ingredients minus the green onions, cilantro, avocado, salsa etc.
Bake for 10-12 minutes until cheese is melted
Remove from oven and top with remaining ingredients . Serve with a lime wedge and drizzle desired amount of lime sauce + sals and serve Immediately
Serves 4
* Any beans or onions, olives taste delicious with this recipe. Add whatever you have and it will still be delicious! Replace garbanzos for black beans or kidney beans. Add yellow onion instead or red, black olives, etc. The list is endless.
