Cranberry Orange Sugar Cookies

The smell of cookies baking and yummy treats to share! This is the perfect season for making cookie with the family! See one of my favorite recipes below.

Let’s be honest most cookies are loaded with all the bad stuff and you can feel kind of sick after eating a much! These cookies are slightly sweet but full of delicious flavor and also healthierl for you! Made with coconut sugar which has a low glycemic index, these are perfect to share with someone this season!

INGREDIENTS

1 cup coconut oil (room temperature)

1/2 cup of juice from 1 can of garbanzo beans ( called aquafaba) 

1.5 tsp vanilla ( clear) 

1 tsp almond extract

Juice of 1 mandarin orange

Zest of 1 orange


DRY

1 Cup coconut sugar

2 tsp baking powder 

3.5 cups of  flour 

Pinch of salt

1/4 tsp cinnamon

1/2 cup chopped fresh cranberries

Directions

Preheat oven to 350.

Cream sugar and oil together with mixer ( or hand mixer) until smooth, then add garbanzo liquid, vanilla, almond extract and mandarin juice. l Mix together.

In a separate bowl mix dry ingredients together. 

Slowly pour dry ingredients into wet and mix until dough is blended and can be rolled into a ball. 

Dust surface with flower and roll out  ( If too wet add a bit more flour, and if needed chill in fridge for 5 minutes. Coconut oil can get slippery if too warm) Sometimes the warmth is good though to let the dough mix well.

Roll out and dust with flower before cutting cookie. 

Use desired cookie cutter shape.  Alpaca cookie cutter’s are the BEST.

Place cookies on cookie sheet  and bake exactly 10 minutes. Do not cook longer. Cookies will not brown and will be slightly soft still when removed from oven. They will harden when cooled. Place on cookie rack to dry.

Leave plain or decorate with your favorite icing!
