Roasted Sweet Potato and arugula salad

I love a hearty salad with all the delicious and nutritious benefits of garden fresh produce! This salad does not disappoint and is one you’ll be sure to love!

ARUGULA-we have fresh arugula growing in our greenhouse and it's so awesome to just go out and pick some delicious greens for a tasty salad! its an amazing Source of folate, Vit K,A, and C! It's even considers to be an herb and not just a green! it's SO delicious

SWEET POTATO-Packed full of antioxidants and vitamins A and C

GARBANZO- A wonderful source of protein and amino acids! They keep you full too because they’re packed with fiber!


RECIPE


INGREDIENTS

2 sweet potatoes ( peeled and diced small)

1 can of garbanzo ( drained)

2-3 avocados ( cubed)

1/2 cup roasted walnuts ( or raw)

Fresh Arugula ( About 5 oz)

Fresh basil leaves 5-6 ( chiffonade)

DRESSING

Juice of 2 lemons

1 Tbs balsamic vinegar

1/4 cup olive oil 

2 Tbs maple syrup

1/2 tsp salt

1/2 a large avocado. ( or 1 whole small avocado) 

1 Tbs water

Mix well in high powered blender.

DIRECTIONS

preheat oven to 400

toss sweet potato in a little olive oil and sprinkle with salt

place in oven for about 20 min

meanwhile prep dressing and garbanzo

place garbanzo in lightly greased skillet. Sprinkle with a tsp garlic powder and a tsp onion powder. salt to taste. Warm on skillet until they start to toast. The toastier the better but don’t let them burn.

Mix all dressing ingredients in high power blender. Blend well and store in glass jar for about a week.

Sweet potatoes are some when you can pierce fhem with a fork and they are starting to really roast and caramelize.

Place arugula in bowl and top with desired amount of garbanzo, sweet potato, and walnuts. Add Avocado and sprinkle with dressing. Finish with some fresh basil.
