Avocado Toast

Avocado Toast Recipe
As the new year comes and we all try to be healthier, avocado toast is an easy meal that is packed with nutrients and taste!
INGREDIENTS FOR TOFU
1 block of super firm tofu ( drained)
1 small to medium bell pepper ( chopped)
1 small yellow or white onion ( chopped )
2-3 garlic cloves
1 cup of pasta sauce, salsa, or tomato sauce
1/2 tsp smoked paprika
1/2 tsp onion powder
Salt to taste
OPTIONAL:
Chopped green onion
Fresh cilantro
INGREDIENTS FOR AVOCADO
2 ripe avocados
1/2 a lemon
1-2 garlic cloves
Salt to taste
6 Slices of bread
Directions
Drain all water from tofu and cut into small cubes
Sauté onion, garlic and pepper in a little olive oil until cooked through
Add tofu and cook till most of the natural liquid from the tofu is gone.
Add sauce and spices, mix well, and cook till tomato sauce is almost dry and tofu is toasting.
While tofu is cooking mash avocado and add lemon juice, garlic, and salt.
Toast bread
Spread a thin layer of avocado mixture topped with 2-3 spoonfuls of tofu.
Top with fresh green onion and cilantro plus a tiny extra dash of salt, and or red pepper for a kick.
If making just 1 serving make tofu ahead of time and store in fridge in airtight container, or freeze. Then just thaw and warm when ready and use.
