Delicious Pumpkin Muffins Recipe

Fall is the perfect time of year to enjoy everything pumpkin. These muffins don’t disappoint. Perfectly moist and full of pumpkin flavor + chocolate, they are hard to resist and will be a hit! 

INGREDIENTS 

DRY 

1 2/3 Cup of flour 

1 cup of sugar 

1 cup dark chocolate chips 

1 tsp pumpkin pie spice

1 tsp baking soda 

1/4 tsp baking powder 

1/4 tsp salt 

WET

Equivalent of 2 eggs ( Ener-G egg replacer ) 

1 cup pumpkin 

1/2 cup butter (melted) I use earth balance butter

DIRECTIONS: 

Pre-heat oven to 350 

Mix dry ingredients together 

Mix wet ingredients together 

Then fold into each other until mixed. 

It will form a somewhat dry  non sticky ball 

Line muffin tin with parchment paper or muffin cups. 

Spoon dough into cups

Bake for 20-25 minutes
