Fall family picnic with Autumn Glory® Apples

Fall has alwyas been my favorite time of year and there's nothing more quintessential about fall than the perfect crisp apple! Autumn Glory® apples are the absolute perfect apple to use for all your baking and recipe making this fall. Their apples are naturally so sweet and crunchy they are sure to be your favorite all year round! Read on to see how I incorporated Autumn Glory Apples into our family picnic

We have a few picnic tables on our property and the weather this time of year is perfect for a yummy meal outside! Autumn Glory® apples are SO delicious and crunchy and were the perfect addition to our picnic dinner!

Autumn Glory is a unique variety of apple grown and marketed in North America exclusively by Domex Superfresh Growers®. Autumn Glory apple is very sweet and crisp with hints of cinnamon and subtle notes of caramel. Some describe it as tasting like apple sauce while others say it reminds them of cider; regardless of how you describe it, Autumn Glory apple has a flavor that will leave you reminiscing for fall. They are SO Delicious!


MINI APPLE PIES


Delicious apples with hints of cinnamon and ginger, all wrapped up in a yummy crescent roll. I love this simple recipe that’s perfect to serve out of a tiny basket at your family gathering!

INGREDIENTS:

2-3 Autumn Glory® apples

2 crescent dough roll

1/4 tsp pumpkin pie spice

1/4 tsp cinnamon

1/4 tsp ginger

1/3 cup coconut sugar

2 Tbs butter ( I use plant-based butter)

1 Tbs corn starch

DIRECTIONS:

  1. Peel, core, and slice apples thinly

  2. Place apples in a mixing bowl

  3. Melt butter in a small saucepan

  4. Add the rest of the ingredients and mix until well blended and sugar is melted.

  5. Open and unroll crescent roll. With a biscuit cutter cut out circles. You’ll get about 8 per package of crescent roll.

  6. Add a small amount of apple on side of the circle and fold over the dough and press down with a fork

  7. Brush a tiny bit of melted butter over each pie.

  8. Place on a non-stick cookie sheet

  9. Bake for amount of time mentioned on dough roll. Approximately 12 minutes.

Prep Time 20 min

Cook Time 20 Min

Makes 16 mini pies ( if only using 1 crescent roll dough use 1-2 apples instead for a total of 8 pies.


Autumn Glory Apple Salad with Coconut Bacon


Crunchy apples with roasted nuts and the perfect mixture of flavors for fall! Coconut bacon adds a smoky flavor and an extra crunch! This salad is sure to be a hit at all your family fall gatherings!

INGREDIENTS

Apple Salad

  • 1 small head romaine lettuce chopped

  • 8 oz. of spinach

  • 2 Autumn Glory® apples tiny sliced

  • Seeds from 1 pomegranate.

  • 1 cup coconut bacon ( See recipe below)

  • 1/2 small red onion thinly sliced

  • 1/2 cup roasted salted pepitas

  • 3/4 cup caramelized pecans.

Dressing

  • 3/4 cup extra virgin olive oil

  • 2 Tbs balsamic reduction

  • 1/4 cup honey

  • 1 tablespoon poppy seeds

  • 1/2 tsp salt

  • 1/2 tsp garlic powder

  • 1 small shallot minced

COCONUT BACON

  • 2 cups unsweetened coconut ( the large flakes)

  • 1 Tbs liquid smoke ( you can add up to 1 1/2 if desired)

  • 1 Tbs liquid aminos

  • 1.5 Tbs maple syrup

  • 1/4 tsp smoked paprika

Preheat oven to 350

Place all ingredients in a bowl and mix well. Spread evenly onto a cookie sheet lined with parchment paper. Bake for 12-14 min. Watch closely after 10 minutes as it can burn quickly. Let cool completely before using. Store in an airtight container.

DIRECTIONS FOR SALAD

You can make the dressing ahead of time! Mix all ingredients together! Add dressing and toss. Place apples on top and sprinkle with extra pepitas, nuts, and drizzle with dressing. ( If desired, soak apples in a little lemon juice prior to keep them fresh and from browning)

Serve and enjoy every bite! It’s SUPER YUMMY
