My Favorite Curry
I love a delicious curry over rice and this recipe is one I made with just items I had on hand and I absolutely LOVE it! It’s easy to make and delicious for the whole family. Read on to see the recipe.
Fresh ingredients like peppers, onion, and garlic from the garden. Lots of flavor and you can even add your desired protein. This is my new favorite dish
RECIPE
My favorite curry
INGREDIENTS
2 can coconut milk
1 cup vegetable broth
1/2 block of tofu drained and cubed
1 12 oz package of broccoli ( frozen)
1 large green bell pepper (sliced)
1 medium yellow onion (chopped)
4 cloves of garlic (minced)
juice of 1 lime + more for serving
2 Tbs honey
2-3Tbs red curry powder
Pinch of cinnamon
1/4 cup salsa (mild)
1 tsp turmeric
1/4 tsp salt ( or to taste)
5-6 basil leaves ( chiffonade cut)
DIRECTIONS
In a medium sized pot heat a little bit of olive oil ( or desired oil) and sauté onions and garlic. About 3-4 minutes.
Add peppers and sauté a couple more minutes.
Add coconut milk, lime juice, and broth and cook for 2-3 minutes
Add tofu, broccoli, salsa, honey, basil, and seasonings.
Mix well and simmer for about 20 minutes ( It tastes better the longer you let it cook together)
Serve over rice with a wedge of lime and some basil! Enjoy!
