Homemade Apple Pie
It’s the time of year when making pies becomes a tradition! I am far from being a pie expert but I do think the one pie I know how to make tastes pretty delicious! I’ve made a few varieties of the same pie and detailed the below! Read on to learn how to make them!

Here at Azure Farm we are plant based which means we don’t use animal products when we cook. Making a pie crust with no butter is hard and also trying to make it more healthy with less oil is even harder! So I ended up with a crust that requires no oil! The apples still have some plant based butter but hey at least part of it is more healthy right?
Pie Version #1- Traditional apple pie with lattice!
This is is a delicious and healthy pie good for any special occasion. The crust is made without any added oils. The brazil nuts have natural oils that help the crust be perfectly tasty. I make this pie with gluten free flour but you can certainly use white or whole wheat pastry flour instead. Enjoy!
Homemade Apple Pie
Crust
1.5 cups Bob’s 1:1 Gluten Free baking flour
1.5 Cups gluten free quick cooking oats
2 cups brazil nuts
1 tsp salt
3/4 cup of water

Directions :
Place oats in food processor and blend until fine
Add nuts, flour, and salt. Blend until it is all as fine as flour.
Place in mixing bowl and slowly add water. Mix and form a ball with your hands, adding water until dough is well mixed and is not crumbly but also not too sticky.
Divide in half. Roll between two pieces of parchment paper to form a 12 inch circle.
Place in pie dish. Trim pastry. If it breaks at any point just push back together with hands and a little water. It does patch well if needed.
Reserve the rest to make the lattice top to the pie and ornamental leaves if desired. If not, just roll remaining dough place over pie once it is filled, add some slits and bake.
Filling
8 Granny smith apples, peeled, sliced, and cored
1 stick of earth balance butter
2 Tbs of water
1/2 cup white sugar
1/2 cup brown sugar
or substitue 1 cup of coconut sugar instead or white and brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/4 tsp corn starch
1 tsp vanilla

Directions
Place apples in a mixing bowl
Melt butter
Add the rest of the ingredients and mix until well blended and sugar is melted.
Pour half of the mixture onto the apples and mix well.

Pie preparation
Place apples in pie dish over crust
Add lattice and place leaves all the way around the edge and where desired.
Brush rest of mixture onto the top of the pie, coating all of it evenly.
Cover pie with foil and bake at 400 for 15 min, lower temperature to 350 and bake for 40 min. Remove foil and let top brown for last 10 minutes or so. SERVE with your favorite vanilla ice cream!

VERSION #2- Apple pie with crumble topping
For this pie I follow the same idea as the first but with an easier crumble topping. This is more like a dutch pie. This is faster to make than the first and just as delicious! Although maybe not as pretty.
Bottom Crust
3/4 cups Bob’s 1:1 Gluten Free baking flour
3/4 Cups gluten free quick cooking oats
1 cups brazil nuts
1/2 tsp salt
1/3 cup of water
Top Crumble
1 1/4 cups of gluten free flour
1/2 cup granulated sugar or coconut sugar ( if you want it to be healthier and less sweet)
1/2 cup coconut oil softened
1/4 tsp salt
1/4 tsp cinnamon
Directions
Crust
Place oats in food processor and blend until fine
Add nuts, flour, and salt. Blend until it is all as fine as flour.
Place in mixing bowl and slowly add water. Mix and form a ball with your hands, adding water until dough is well mixed and is not crumbly but also not too sticky.

Topping
Combine all topping ingredients in a large bowl and mix together with your hands. It will be crumbly.
Filling
6-8 Granny smith apples, peeled, sliced, and cored
1/2 stick of earth balance butter
2 Tbs of water
1//4 cup white sugar
1/4 cup brown sugar
or substitue 1/2 cup of coconut sugar instead or white and brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/4 tsp corn starch
1 tsp vanilla
~
Directions
Place apples in a mixing bowl
Melt butter
Add the rest of the ingredients and mix until well blended and sugar is melted.
Pour mixture onto the apples and mix well.

Pie preparation
Place apples in pie dish over crust
Sprinkle crumbles evenly over top. You can also melt a tiny bit more butter and drizzle over the top. Add leaf cut outs if you’d like from left over crust dough.
Cover pie with foil and bake at 400 for 15 min, lower temperature to 350 and bake for 40 min. Remove foil and let top brown for last 10 minutes or so. SERVE with your favorite vanilla ice cream!
