Lentil Sloppy Joes
An easy lunch you can cook any day of the week and enjoy with the whole family !
Someone recently wrote me and said have you made sloppy joe’s while on quarantine! I had not! There are so many recipes out here! I was suggested one from the Minimalist Baker and then I changed it up and added/removed some things to make it how I liked it! Below is what I came up with. Smokey, savory, sweet, salty, it’s all of the above and SO very tasty!
Lentil Sloppy Joe
INGREDIENTS
1 cup of green lentils.
2 Tbsp Olive oil
1 medium yellow onion, diced ( extra sliced to serve )
3-4 cloves or garlic ( about 2 Tbs)
1 red bell pepper, diced
15 ounce can of tomato sauce (one that is seasoned)
1/4 cup ketchup
2 Tbs maple syrup
2Tbs Worcestershire sauce
1 Tbs liquid smoke
2 Tsp of sloppy joe seasoning ( or 2 tsp chilli powder ,1 tsp cumin, a pinch of smoked paprika)
To Serve:
Serve on toasted bun with onions! I like to eat the with chips and cucumbers.
DIRECTIONS:
1.Cook the lentils in 2 cups of water of vegetable broth. Bring to a boil then simmer until soft then drain the water
2. While lentils cook saute onion, garlic, and pepper in olive oil over medium heat
3. Cook for 5 min then add the tomato sauce, maple syrup, and all the seasonings, ketchup, liquid smoke, Worcestershire sauce etc.
4. Add the lentils and cook until all is combined well and mixture has thickened. Add extra seasoning if desired.
5.) Serve on toasted buns.
Will keep in fridge for 4-5 days. If needed add a little broth when re-heating if too thick.
Makes about 4 servings
