Roasted peach flatbread
Summer is coming and our peach tree’s are loaded with delicious looking peaches! Here is a yummy , easy to make recipe that is sure to satisfy all those peach cravings!
I started by making some fresh arugula pesto form our arugula in our garden! Nothing better than gathering items right from your homestead!
Roasted Peach Flatbread
INGREDIENTS
6 large flatbread pieces ( Naan is preferred)
2 cups of peaches (fresh or frozen, sliced)
1 large yellow onion ( cut into rings)
2 cups of arugula
1 cup of pine nuts
3-4 cloves of garlic
Olive oil
Salt to taste
Balsamic reduction
Plant-based feta ( we use Violife brand)
DIRECTIONS
Preheat oven to 400
1.Take each flatbread and brush with olive oil. Bake in oven for 10 min ( or until the brad is the desired consistency) You ideally want it somewhat firmer but not super crunchy
2.On a separate tray place peaches and onions ( toss onions in olive oil and salt before placing on tray Turn oven on to broil mode and broil peaches and onions till they are looking well done and even have some char to the edges. About 10 min.
3.While peaches are roasting take arugula and pine nuts and blend in food processor. Add about 2 tablespoons of olive oil and sprinkle salt. Add in garlic and you’ve got arugula pesto!
4.Spread a thin layer of pesto onto bread. Add roasted peach and onions, then crumbled feta. Finish with a balsamic reduction drizzle on top!
5.Cut bread into smaller pieces.
6.Serve and Enjoy!
