5 Fresh, Healthy, Seasonal Salads To Enjoy This Summer!

Summer is here in all its glory and sunshine, and there’s no better way to celebrate the season than with fresh, vibrant salads!

These salads are perfect for a picnic with the family, firing up the grill with friends, or for a light meal.

I’ve rounded up some of my favorite recipes that highlight the best of what summer has to offer. From the sweetness of watermelon paired with a tangy honey lime dressing, a refreshing cucumber salad with a hint of dill, to a colorful corn salad, there’s something for everyone.

1.watermelon salad with honey-lime dressing

One of the benefits of eating seasonally is the hydration you get from fresh summer fruit. Isn’t it amazing how nature just knows when you need what?!

I love juicy watermelons on a hot day, and this watermelon salad paired with basil, mint, and a delicious dressing is always a winner at summer gatherings.

2. Potato and dill salad with garlic zest dressing

If you are looking for something more filling or as a main meal, this potato salad is a great option.

I love the flavor of dill! It has a deliciously fresh, citrus-like taste with a slightly grassy undertone, making things so fresh and tasty! It's perfect for a spring or summer salad.

The garlic zest vinegar dressing gives the fingerling potatoes that perfect tang!

3. blueberry and spinach salad

Blueberries are abundant in our garden during this time of year, so naturally, we use them a lot in recipes. I love all the antioxidants they provide for my family!

This salad combines the sweetness of blueberries, the green goodness of baby spinach, the crunchiness of almonds, and the creaminess of avocado and feta to make a perfectly balanced dish!

It contains Brussels sprouts as well, which may not be in season, but you can simply omit them if you wish.

4. CORN, RED ONION & BASIL SALAD

This simple salad makes for the perfect colorful side dish! Crisp corn, fresh from the garden, is a healthy gluten-free option. And if you don’t have fresh corn, frozen or sweet corn will also work.

Red onion, basil, and red pepper flakes bring the corn to life with some extra flavor and peppery taste, but don’t worry, it is not too peppery ;-)

5. CUCUMBER SALAD WITH LEMON AND DILL

This is another simple salad that is quick to make. Fresh dill, lemon zest, and white vinegar are all you need to make the cucumbers pop!

Did you know that cucumbers comprise around 96% water (the highest water content of any food)? So they are another excellent vegetable to hydrate you during the summer!
