CARROTS IN A BLANKET
We’ve got more daylight and warmer days. Pops of spring are all over the farm! From flowers to baby chickens spring is a wonderful time to enjoy the outdoors and time with family. Here is a fun spring themed appetizer you can enjoy with your family on these warmer days. Not to mention it’s cute too! I present to you Carrots in a blanket! No need for hot dogs, try this healthier alternative the whole family will love.
For this recipe I seasoned the carrots with liquid smoke and garlic plus other tasty ingredients. There results are smoky tasty carrots almost like a hot dog but full of all the vitamins and fiber carrots bring! You can make them two ways! The traditional pigs in a blanket style which is smaller pieces wrapped in dough, or you can make thin strips to wrap the carrot in and display them in a fun way as shown below!
You can soak the carrots overnight in the liquid to help them absorb the delicious flavor! Then bake the carrots in the tasty liquid until they are soft! If only making the tiny pigs in a blanket you can use baby carrots if you’d like.
Wrap them in thin strips of puff pastry and then brush the liquid over them before baking them!
Once cooked garnish with fresh cilantro or parsley and serve immediately!
RECIPE
Carrots in a Blanket
INGREDIENTS
10-12 regular size carrots
or 20 or so baby carrots
SAUCE
1/2 cup soy sauce
1/2 cup ketchup
2 Tbs honey
1 Tbs liquid smoke
2-3 garlic ( zested )
1 inch fresh ginger ( zested)
1/2 cup water
1/2 Tbs smoked paprika
1/2 Tbs onion powder
1 sheet puff pastry
*cilantro or parsley, optional
INSTRUCTIONS
1.Wash and peel carrots
2.Mix all sauce ingredients and place in a ziplock bag. Put carrots in the bag and mix well. For best results let sit overnight or for a couple hours.
3.Preheat oven to 400
4.Take carrots and place in baking dish along with liquid. Bake for about 30 min until carrots are softened but not mushy. Turn carrots half way through and spoon liquid over carrots
5.Remove and let cool
6. Once cooled wrap carrots in puff pastry. Cut into thin strips and wrap around long carrot sticks or wider strips for tiny pieces.
7. Brush pieces with the sauce before placing back in oven
8. Bake for 10-15 min until golden
9. Serve same day and garnish with cilantro leaves or parsley leaves
10. Serve with ketchup or preferred sauce.
