A Garden-To-Table Summer Squash Recipe

Got a lot of summer squash? Then this garden-to-table recipe is for you!

It's super simple and easy to make, perfect for a quick lunch or dinner side dish.

Prep time: 5 minutes

Cook time: 14 minutes

Serves: 4

Ingredients

  • 3 lbs yellow squash (about 6 medium sizes) cut into cubes

  • 1 yellow onion

  • 3-4 cloves of garlic

  • 2-3 springs of fresh thyme

  • salt and pepper to taste

  • 1/2 cup of toasted pecans ( I like honey roasted too)

  • 1/2 cup of feta ( I use a plant-based one)

Directions

  • Over medium heat, saute sliced onions in olive oil until translucent. Add the garlic and cook for another 2 minutes.

  • Add the squash and mix well.

  • Cook for 10 minutes or until squash is tender and a little golden.

  • Salt and pepper to taste

  • Place in serving dish and top with fresh thyme, pecans, and feta.

  • Enjoy!
