Spring Blueberry and Spinach Salad

The perfect recipe for spring! Sweet and crisp and all sorts of fresh and yummy!

Blueberry Spinach Salad 

INGREDIENTS

SALAD

  • 1 lb. brussel sprouts ends trimmed and chopped finely 

  • 3 cups spinach leaves ( you may chop if desired) 

  • 2 cups fresh blueberries

  • 1 cup slivered almonds ( roasted i desired) 

  • 2 ripe avocados peeled, pitted, and chopped

  • 1/4 red onion sliced into tiny pieces 

  • 1/3 cup crumbled feta cheese ( I use Vio-life just like feta plant-based feta) 

  • Zest of 1 lemon 

  • Kosher salt to taste

DRESSING

  • 2/3 cup extra virgin olive oil

  • 1/3 cup lemon juice ( about 2 large lemons) 

  • 2 Tbs maple syrup 

  • 2 cloves garlic minced

  • 2 teaspoons poppy seeds

  • 2 teaspoons dijon mustard 

  • 1/4 teaspoon Kosher salt

  • 1/2 medium size avocado 

INSTRUCTIONS

1.Place all dressing ingredients, except poppy seeds, in blender and blend till smooth. Add poppy seeds and set dressing aside

2. Drizzle almonds with some olive oil, sprinkle with salt. Roast at 400 degrees for 5-7 minutes. 

3.Chop brussel sprouts and place with spinach, almonds and onions. 

4. Chop avocado and add to salad along with blueberries. 

5. Sprinkle plant-based feta over entire salad. 

6. Add dressing and toss well. 

7. Add lemon zest and salt one more time. 

Serve!!
