Garden Fresh Corn and Tomato side dish

Summer is quickly approaching and this delicious and easy side dish is sure to be a hit! Delicious corn and juicy tomatoes complement each other so well! It can be served hot or cold. Keep reading for the recipe!

There’s something about fresh corn that makes it irresistible especially in summer! I love how it goes well with a fresh tomato and some basil. The perfect combination that will hopefully please even your pickiest eater!

RECIPE


INGREDIENTS

4 Ears of fresh corn ( or the equivalent) about 2 cups of corn

4 medium sized garden fresh tomatoes

Handful of fresh basil

3-4 cloves for garlic ( peeled and minced)

Salt and pepper to taste

1/4 cup of water

DIRECTIONS

Cut kernels off the cob

In a medium saute pan melt about a teaspoon of butter, add garlic, and cook on medium heat for 2-3 min.

Add fresh corn and water. Cook for about 5 min

Add chopped tomatoes and add some salt and pepper.

Cook for 10 more minutes uncovered on medium to high heat.

Add fresh basil, stir well and finish cooking a couple minutes.

Serve hot or cold
