Roasted Brussels with Garlic Dipping Sauce
Fresh delicious Brussels from the garden roasted and served with a creamy garlic sauce! So tasty and healthy too!!
Above is a picture from about 8 weeks ago and now the Brussel sprouts are ready and they sure taste delicious roasted! I love gardening but what I love even more is eating delicious food that we grew.
Brussel Sprouts are very high in antioxidants and so healthy to eat! Love that we could harvest our own and make a yummy recipe. They are also high in fiber and vitamin k.
Little Ava helped me in the kitchen get everything chopped and prepped! She loved it and found it all to be quit tasty.
Look at her sweet little hands! She is the cutest!
RECIPE
Roasted Brussel Sprouts with Garlic dipping sauce
INGREDIENTS:
FOR BRUSSELS
2 pounds brussel sprouts, trimmed and halved
salt to taste
olive oil to drizzle
FOR SAUCE
1/2 block silken tofu
1tsp salt
2 Tbs olive oil
1 Tbs dijon mustard
1 small lemon
3 cloves garlic ( small)
1 tsp garlic powder
chopped parsley to garnish ( or preferred herb)
DIRECTIONS:
Heat oven to 425
Toss brussels in olive oil and salt
Once the brussels have been trimmed and cut in half, they need to be coated in oil and roasted at 425F for 25-27 minutes total. ( They can also be roasted in an air fryer and they turn out great that way too and quicker)
Turn them at about 20 min to ensure they are crispy.
In a small food processor or high powered blender mix all sauce ingredients.
Add more salt as needed and set aside to chill until the sprouts are ready. Garnish with parsley or desired herb when ready.
Serve roasted sprouts with dipping sauce as an appetizer!
Serves 4-6 depending on how many you roast.
