breakfast to start the day
breakfast oatmeal
Sometimes, it’s hard to achieve a delicious oatmeal with good consistency and flavor.
Here is a yummy and easy recipe that has just the right amount of creaminess and flavor, using coconut and orange zest. Instead of strawberries, you can top it with pomegranate, grapefruit, apples, or pears, which are in season.
It’s a great breakfast, especially on cold mornings!

banana walnut muffins
Sure, muffins are not always considered healthy as they can be filled with sugar and fat. But these deserve a spot here, as they are so filling and satisfying.
They offer some good fiber from the bananas and oat flour, and walnuts ensure a protein and healthy fat boost.
These are great for breakfast on the go or any time of the day!

lunch to keep you going
orange and garlic tofu
Orange and garlic tofu, served with brown rice and broccoli! It’s a little bit sweet and a little bit spicy, and the tofu has a nice texture, too.
This recipe is pretty simple to make, and I usually have all the ingredients to make it on hand, so it’s quick to whip up and make! It helps when you have a big batch of brown rice cooked and frozen, ready for use at any time.
With the tofu providing protein, brown rice providing healthy carbs and fiber, and broccoli providing essential nutrients, it’s the perfect, balanced, healthy lunch!

garbanzo “chicken” salad sandwich
This recipe is so quick to whip up, making it perfect for a quick lunch.
Garbanzos (or chickpeas) are a great source of plant-based protein and fiber, filling you up for longer.
My original recipe includes grapes, which makes this great for summer, but for the colder months, you can add chopped apples. If you don’t like the idea of fruits, keep it savory and mix in some chopped cabbage.

Dinner To Round It Up
Vegetable skillet pot pie
This is a DELICIOUS easy-to-make hearty meal. It’s warm and cozy, and all things perfect for these cold winter days!
Using a lot of in-season garden fresh veggies and herbs makes this skillet pot pie wholesome and nutritious. This recipe is a go-to for our family dinners and can be modified too!

Curry lentil soup
I don’t know about you, but I love soup, especially during the winter. And this one is particularly tasty, if I may say so!
Its base is lentils, which are a great source of protein and fiber. Lentils also offer many other minerals, including folate, potassium, and iron.
I love curry, but many times it’s too spicy. This is a mild curry with some sweetness and a lot of flavor, so your whole family will love it!

Anjou pear salad with balsamic vinaigrette
Long gone are the days of salads consisting of only greens, tomatoes, and cucumber!
This delicious salad offers so much yummy goodness, including arugula, pears, feta cheese, pistachios, pomegranates, and red onions.

Roasted vegetables with sweet & smoky pepitas and cranberries
When I make this fall-inspired roasted vegetable dish for my family, it feels like we are eating pure goodness!
This recipe is a favorite in fall and winter as it has tons of heart-warming flavor and seasonal goodness. It is quick, easy, and the perfect side dish to any main dish or simply enjoyed on its own!
Topping it with crunchy, smoky pepitas and cranberries takes an ordinary dish to extraordinary deliciousness!
