So, in the spirit of setting new year resolutions and turning a new page, I am kicking off the year with a healthy recipe round-up, focusing on the goodness of seasonal foods.

I don't know about you, but after a holiday season filled with indulgence, I'm ready to give my body some love and nourishment!

From a wholesome breakfast to a satisfying dinner, they are all quick and easy to make and feature ingredients that are in their prime during this time of year.

Instead I'm sharing hearty, delicious recipes that make healthy eating a breeze and which my family and I enjoy regularly.

So, what's on the menu?

The ultimate breakfast indulgence with hearty breakfast oatmeal and the most divine banana walnut muffins.

Lunch is served with a cozy fall garbanzo chili that'll warm you up from the inside out and a vegetable skillet pot pie that celebrates all things hearty and wholesome.

For dinner, a curry lentil soup that's as comforting as it is nutritious and an orange and garlic tofu dish that will replace and beat any unhealthy takeout.

Last but not least, get in some more greens with salads and veggies.

An Anjou pear salad with balsamic vinaigrette, roasted sweet potato and arugula salad, and roasted vegetables with sweet and smoky pepitas will ensure you are off to a great, healthy start!

Sometimes, it’s hard to achieve a delicious oatmeal with good consistency and flavor.

Here is a yummy and easy recipe that has just the right amount of creaminess and flavor, using coconut and orange zest. Instead of strawberries, you can top it with pomegranate, grapefruit, apples, or pears, which are in season.

It’s a great breakfast, especially on cold mornings!

orange and garlic tofu

Orange and garlic tofu, served with brown rice and broccoli! It’s a little bit sweet and a little bit spicy, and the tofu has a nice texture, too.

This recipe is pretty simple to make, and I usually have all the ingredients to make it on hand, so it’s quick to whip up and make! It helps when you have a big batch of brown rice cooked and frozen, ready for use at any time.

With the tofu providing protein, brown rice providing healthy carbs and fiber, and broccoli providing essential nutrients, it’s the perfect, balanced, healthy lunch!

I don’t know about you, but I love soup, especially during the winter. And this one is particularly tasty, if I may say so!

Its base is lentils, which are a great source of protein and fiber. Lentils also offer many other minerals, including folate, potassium, and iron.

I love curry, but many times it’s too spicy. This is a mild curry with some sweetness and a lot of flavor, so your whole family will love it!
