A delicious jackfruit sandwich that will have you wanting more!

Summer is still around for a few more weeks and I’m going to enjoy all the yummy summer food as long as I can! This delicious jackfruit barbecue sandwich is perfect for your outdoor get together and maybe even Labor Day gathering! It’s perfect paired with homemade pickles and homegrown tomatoes!

I love jackfruit because it’s very versatile. It’s light and not heavy on the stomach but can be filling and full of flavor when seasoned properly. It’s rich in vitamin C and helps with digestion because it’s so high in fiber. It’s also very high in potassium which makes it the perfect thing to eat if you don’t want to eat yet another banana. I love how it cooks well with barbecue sauce and has the perfect texture for a sandwich like this!

Jackfruit Barbecue Sandwich

INGREDIENTS

For Jackfruit

(2) 14oz cans of young jackfruit drained and pulled apart

1 medium sized yellow onion ( chopped)

2-3 cloves of garlic (minced)

1 cup of peach barbecue or 8oz jar ( see recipe below) or use your favorite barbecue sauce

1 tsp smoked paprika

1 tsp liquid smoke

For Sandwich

Hamburger buns

Sliced tomato

Red onion sliced

Pickles

Mayonnaise

Peach Barbecue Sauce

6 cups finely chopped pitted peeled peaches (about 3 lb or 9 medium)

1 cup finely chopped seeded red bell pepper (about 1 large)

1 cup finely chopped onion (about 1 large)

3 Tbsp finely chopped garlic (about 14 cloves)

1-1/4 cups honey

3/4 cup cider vinegar

1 Tbsp Worcestershire sauce

1 tsp smoked paprika

2 tsp hot pepper flakes

2 tsp dry mustard

2 tsp salt

Combine all ingredients in a large saucepan. Bring to a boil. Reduce heat and simmer, stirring frequently, until mixture thickens to the consistency of a thin commercial barbeque sauce, about 25 minutes. If desired, puree in batches in a food processor or use an immersion blender to help break down the peaches.

This yields about 8 cups of sauce which you can can in 8oz jars if desired! See the full recipe HERE for directions when canning.

DIRECTIONS for Jackfruit and sandwich

Heat a saucepan with a little olive oil. Sautee onion until translucent

Add garlic, jackfruit and spices. Cook for a few minutes then add barbecue sauce.

Add enough to coat the jackfruit well but it not be too soggy. Cook down until the jackfruit starts to brown and be golden.

Toast hamburger buns and assemble your sandwich. I used homemade pickles and a delicious tomato fresh from the garden! Red onion adds a bit of a kick and crunch while the jackfruit is sweet and savory with a little spice!
