Peppermint Hot Cocoa
The weather has definitely gotten cooler around here and it’s always nice to have a warm drink by the twinkle lights! Here is a super simple holiday inspired hot cocoa recipe you can enjoy all throughout the winter!
Dark chocolate, cocoa powder, coconut and almond milk, plus some crushed peppermints make this super tasty and fun for those cozy nights. Make a large batch and sip for a few days as it re-warms well on the stove.
RECIPE
1 13.5 oz can of low fat coconut milk
2. cup unsweetened vanilla almond milk
1/4 cup cacao powder
1/4 cup dark chocolate chips
2 Tbs pure maple syrup
3-4 drops of pure peppermint extract
Whipped Cream ( plant based)
Crushed peppermints and fresh mint to garnish
In a small saucepan slowly milk until warmed. Add chocolate chips, cocoa powder, and remaining ingredients except whipped cream and peppermints.
Once chocolate is all melted and blended well, pour into mug and top with whipped cream and crushed peppermints, and some fresh mint!
