Pistachio and Pomegranate Chocolate Bark full of richness and crunch

December and the holidays are the best excuses for everything that’s yummy, right?!!

After a year of trying hard to maintain some sort of healthy diet, keeping your hands out of the cookie jar, and saying no to that second slice of pie, I think we deserve to treat ourselves!

And not a lot of things go together as good as chocolate and nuts! Especially pistachios! Add some pomegranate seeds to balance out the sweetness, adding a touch of tartness, and you’ve got a winner combo!

This recipe is quick, requires no baking, and is easy enough for kids to jump in and help. Ava loves when I’m making something that she can help with.

It’s so simple, yet packs a punch in flavor, richness, and crispiness. The combination of chocolate, salted nuts, and pomegranate jewels creates the perfect balance. And it looks gorgeous too!

PISTACHIO AND POMEGRANATE CHOCOLATE BARK

INGREDIENTS:

1.5 cups dark chocolate (vegan chocolate will work just as well)

2 tbsp coconut oil

Jewels from 1 pomegranate (or more if desired)

1/2 cup crushed, salted pistachios (THESE from Country Life Natural Foods are my favorite)


DIRECTIONS:

1. Melt the chocolate and coconut oil and mix them well together

2. Line a baking tray with parchment or wax paper, leaving a small overhang

3. Pour in the melted chocolate and evenly spread with a spatula

4. Sprinkle pomegranate seeds on top

5. Sprinkle the crushed pistachios to cover all of the chocolate

6. Cool in the fridge until the chocolate has hardened (approx. 30 - 60 minutes)

7. Break into pieces and serve!

8. Don’t be afraid to get creative and try different toppings! Walnuts, pecans, desiccated coconut, orange zest, and dried cranberries will all taste wonderful!

This will also make a lovely gift! Add a few pieces in a beautiful mason jar (Ball® home canning has some great options) and tie a lovely piece of lint around the lid.
