Pumpkin Pie pancakes

RECIPE
Pumpkin Pie Pancakes
GF/plant-based
INGREDIENTS
2 cups GF oat flour
1 can pumpkin pie mix
1/2-3/4 cup of coconut milk ( refrigerated kind)
2 Tbs maple syrup
1 Tbs baking powder
1 Tsp pumpkin pie spice
1 Tsp cinnamon
1/8 tsp salt
1 Tba vanilla extract
1 Tsp apple cider vinegar
DIRECTIONS
Mix all ingredients together. Consistency should be thick but able to mix well. If too thick add a touch more milk till you can easily pour batter onto heated skillet
Oil a skillet and warm to medium/low heat. Pour batter and cook for 2-3 minutes each side, ( or until browned and some bubbles on top side) Flip and cook again.
Serve with applesauce or butter, and maple syrup.
Makes about 8-10 small/medium sized pancakes.
