Delicious Strawberry Honey Butter
It’s strawberry season and nothing tastes better than some delicious strawberry butter sweetened by honey on some warm English muffin for breakfast. My parents have a mini strawberry patch and Ava has loved seeing the little berries turn from green to bright red! Read on to see how to make this delicious butter and enjoy the strawberry goodness all year long!

WHAT IS FRUIT BUTTER?
Fruit butters are sweet spreads made by cooking fruit pulp with sugar to a thick consistency. Their smooth, spreadable texture makes them an ideal substitute for butter on bread, toast, or muffins. Fruit butter has a thinner consistency than jam and is less sweet than jelly.
We try to make delicious food here and have it be as healthy as well! Fruit butters have a lot less sugar than the traditional jams and jellies, making this a great and healthier option. This strawberry butter contains much less sugar than strawberry jam and is made without any dairy, getting its name for its rich, buttery texture. Trust me you’ll find it to be quite delicious.
A fruit butter can be made from any firm fruit. Usually they are flavored with spices but this recipe simply calls for lemon juice, honey, sugar, vanilla, and fresh strawberries. It’s simple and the perfect family activity after a day at the strawberry patch!

Ball®’s Strawberry Honey Butter
INGREDIENTS
3 lbs. washed and hulled ripe strawberries
3/4 cup honey
3/4 cup sugar
1 Tbsp. bottled lemon juice
2 tsp. vanilla
¼ tsp. salt
DIRECTIONS
Prepare a boiling water canner. Heat jars in simmering water until ready to use, do not boil. Wash lids in warm soapy water and set aside with bands.
Puree strawberries in the bowl of the food processor until smooth.
Combine strawberry puree with remaining ingredients in a deep pot set over medium heat. Bring mixture to a boil stirring frequently to prevent scorching, lower heat and simmer until mixture is very thick, about 60-90 minutes, stirring frequently. Any foam produced by strawberries will disappear with the cooking process. Strawberry butter is finished cooking when it holds the shape on a spoon. ( See notes below)
Ladle hot butter into a hot jar leaving a ¼ inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar and apply band, adjust to fingertip tight. Place the jar in a boiling water canner. Repeat until all jars are filled.
Process jars 10 minutes, adjusting for altitude. Turn off heat, remove lid, let jars stand for 5 minutes. Remove jars and cool for 12-24 hours. Check lids for seal, they should not flex when center is pressed.
To test doneness, remove a spoonful of fruit butter and let it rest at room temperature, away from the steam, for 2 minutes. If the butter remains mounded on the spoon, it’s ready. Alternatively, spoon a little fruit butter onto a chilled plate. If the liquid runs off the fruit butter, it needs more time to cook.
TIPS WHEN COOKING FRUIT BUTTER
If you're making a butter with “seedy” berries, such as blackberries, raspberries or even blueberries, you can puree the butter and pass it through a sieve for the smoothest result.
Maintain a lively simmer once you’ve reached a boiling point and turned your heat down
You must mix it often to ensure nothing is sticking or burning
