A Garden-To-Table Summer Squash Recipe

It's super simple and easy to make, perfect for a quick lunch or dinner side dish.

Serves: 4
Ingredients
3 lbs yellow squash (about 6 medium sizes) cut into cubes
1 yellow onion
3-4 cloves of garlic
2-3 springs of fresh thyme
salt and pepper to taste
1/2 cup of toasted pecans ( I like honey roasted too)
1/2 cup of feta ( I use a plant-based one)
Directions
Over medium heat, saute sliced onions in olive oil until translucent. Add the garlic and cook for another 2 minutes.
Add the squash and mix well.
Cook for 10 minutes or until squash is tender and a little golden.
Salt and pepper to taste
Place in serving dish and top with fresh thyme, pecans, and feta.
