Mouthwatering Pumpkin Muffins - A Delicious Treat For Fall!
Fall is the perfect time of year to enjoy everything pumpkin. They are kind of synonymous, right?!
So naturally, pumpkin muffins are in order!
And let me just say, these pumpkin muffins don’t disappoint. They are perfectly moist and full of pumpkin flavor and chocolate. They are hard to resist and will be a hit with everyone!

My mini chef helped me make these! Always ready to help mom (aka getting to enjoy all the yummy ingredients!)
This recipe makes about 12 muffins.
INGREDIENTS:
1 & 2/3 cups of flour
1 cup of sugar
1 cup dark chocolate chips
1 tsp pumpkin pie spice
1 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
The equivalent of 2 eggs ( Ener-G egg replacer )
1 cup pumpkin
1/2 cup butter (melted): I use Earth Balance butter
DIRECTIONS:
Pre-heat oven to 350 F
Mix the dry ingredients together
Mix the wet ingredients together
Then, fold into each other until mixed
It will form a somewhat dry, non-sticky ball
Line a muffin tin with parchment paper or muffin cups
Spoon dough into cups
Bake for 20–25 minutes. Test with a knife to see if it is baked all the way through.
