Tangy But Oh-So-Sweet Orange Flower And Pistachio Marmalade

Having homemade marmalade on hand never hurt anyone! How convenient it is to grab some marmalade from your pantry whenever the craving hits! Or serving it at a brunch with friends - they'll be so impressed!

I love making recipes using in-season ingredients, and oranges and citrus are some of my favorites to use during winter. So I decided to make a delicious orange flower and pistachio marmalade.

This orange flower and pistachio marmalade is sweet with floral notes and goes so well with toast, muffins, and desserts.

It also makes the perfect gift for loved ones this Valentine’s day or any other special occasion.

Did you know that orange blossom water is made from the flowers of oranges, just like rose water? Orange flower adds a lovely citrus and floral taste to any recipe, taking it from meh to wow! It can, however, be overpowering, so a little goes a long way.

If you cannot find orange blossom water, you can make your own:

Crush two cups of orange blossoms in a mortar and pestle until they are a paste. Let sit for 2 hours. Combine the petal paste and distilled water in a Ball jar. Stir and cover. Let sit for 2 weeks. Strain the blossoms out of the water and then add the water to sterilized jars. It can be hard to find fresh orange blossoms, but dried ones will work also. Now you have orange flower water!

Preserving Method: Water-Bath-Canning

Processing Time: 10 Minutes

Makes: about 6 (8 oz) Half Pint Jars

For this recipe, I used the Ball® 8oz Quilted Crystal Jars. GET THEM HERE

ingredients:

6 oranges (about 2.5 lbs), scrubbed

3 cups water

1 large lemon, zested

1 tbsp. bottled lemon juice

2 tsp. orange flower water

1/4 tsp. salt

4 tbsp. Ball® Low/ No sugar pectin

1.5 cups Allulose alternative sweetener

1/2 cup chopped pistachios

directions:

  1. Prepare boiling water canner. Heat jars in simmering water until ready for use. Do not boil. Wash lids in warm soapy water and set aside with bands

  2. Peel 4 of the oranges with a vegetable peeler, careful to avoid the white pith. Stack peels and slice into slivers. Combine slivered peels, lemon zest and water in a non-reactive saucepan, bring to a simmer, and cook for about 30 minutes, until the peels have softened and the liquid is reduced to 1 cup. Let cool completely.

  3. Juice all oranges and the lemon. Pour the juice through a strainer and set aside, discarding solids.

  4. Prepare boiling water canner. Heat jars in simmering water until ready to use, do not boil. Wash lids in warm soapy water and set aside with bands.

  5. Combine juice with peels, bottled lemon juice, and orange flower water, and stir to combine, then gradually stir in pectin. While stirring frequently, bring the mixture to a full rolling boil that cannot be stirred down.

  6. Whisk in allulose and add pistachios. Return mixture to a full rolling boil. Boil hard for 1 minute, stirring constantly. Remove from heat. Skim foam if necessary.

  7. Ladle hot marmalade into a hot jar, leaving a 1/4-inch headspace. Remove air bubbles. Wipe the jar rim and center the lid on the jar. Apply the band and adjust it to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.

  8. Process jars for 10 minutes, adjusting for altitude. Turn off the heat, remove the lid, and let the jars stand for 5 minutes. Remove jars and cool for 12-24 hours. Check lids for seal, they should not flex when the center is pressed.

WHAT YOU NEED:

  • Scrap pieces of linen or plain fabric that will fit over the lid of the glass jars.

  • Any color paint your heart desires. We chose white and pink, 'cause Valentine’s…

  • Paper towel or toilet roll cores. The paper towel cores are stiffer, so they do work a bit better.

  • Brown string or lint.

DIRECTIONS:

  1. Lightly press the cardboard cores in the middle to bend in and form a heart-shaped stamp.

  2. Mix your paint colors on a paper plate or any flat surface you don’t mind messing on. We mixed the white and pink to create a fun marble-like effect!

  3. Dip the core into the paint and stamp away on your fabric pieces.

  4. Let it dry, and tightly fit each piece onto a glass jar with some string or lint.

  5. So easy!
