Potato and Dill Salad
I have been trying to create new recipes with items that are fresh from our garden. So I put some of my favorite ingredients together potatoes, lemon, garlic etc to create this very fresh and delicious recipe! Farm to table and super healthy too!

I stared with some fresh dll from the garden. I love the flavor of dill! It makes things so fresh and tasty! Perfect as a spring or summer salad.
I love tiny fingering potatoes. They are the perfect size to be bite sized and once coated in the delicious dressing you will want to eat every bite!
POTATO AND DILL SALAD RECIPE
INGREDIENTS
2 cups fingerling or small red potatoes ( halved or cubed)
3-4 green onions ( chopped)
1/2 red onion ( chopped)
1/4 cup fresh dill ( chopped)
DRESSING
Juice of 2 lemons
1tsp lemon zest
4 cloves of garlic ( minced)
1.5 Tbs of olive oil
2 tsp coconut sugar
1 tsp salt
1/2 tsp apple cider vinegar
Tiny pinch of red pepper flakes
DIRECTIONS
Cut potatoes in half or small cubes and boil for about 20 min or until soft ( salt the water) Peel if desired.
In a small bowl, add lemon juice, zest, and other dressing ingredients.
Chop the green onions, red onions, and dill.
Once the potatoes are done, mix the dressing liquid in while the potatoes are still hot ( Must do this so flavor sets into potatoes)
Add the chopped green onions, red onion, and dill.
Mix well and add salt once again
Optional: add chopped avocado
Adjust the amount of dressing as desired.
Chill before serving. Store in fridge and keep for 2-3 days.
